Job Description
We are looking for an experienced sous-chef specialized in Korean cuisine who will support our head chef in leading the kitchen with expertise, precision, and passion. The ideal candidate has experience in high-quality Korean restaurants and possesses thorough knowledge of traditional and modern Korean cooking techniques.
Core Responsibilities
* Assist the head chef in preparing and executing all Korean dishes according to authentic recipes and modern techniques
* Support daily kitchen operations during lunch and dinner service
* Ensure consistent quality, presentation, and authentic flavor profiles
* Help manage inventory, orders, and food quality according to HACCP standards
* Contribute to the development of seasonal menus in collaboration with the head chef
* Guide and coach kitchen staff
* Apply fermentation techniques (kimchi and other vegetables)
Profiel
Experience
* Minimum 2 years work experience in a renowned Korean restaurant
* Experience with complete Korean menu
* Minimum 1 year experience in a supervisory or coordinating role in a professional kitchen
* Experience with traditional Korean fermentation processes (minimum 1 year)
Technical Skills
* Good knowledge of classic Korean cuisines (through times, historical and modern)
* Proficiency in traditional techniques: jang-??? (fermentation), jjim-? (steaming), gui-?? (grilling), jorim-?? (braising), muchim-?? (mixing)
* Knowledge of seasonal ingredients and their application in Korean cuisine
* Proficiency in knife and cutting work according to Korean standards
Language
* Fluent Korean (native level or C2): required for communication with kitchen staff, reading authentic recipes, and understanding culinary nuances
* Dutch (minimum B2): required for communication with team and customers
* English (minimum B2): required for international customers and suppliers
Cultural Expertise
* Good knowledge of Korean food culture and dining etiquette
* Understanding of jang-?? (fermentation culture) and jeolgi-?? (seasonal traditions)
* Experience with Korean ingredients and their specific applications
* Understanding of ??? (traditional table setting) and meal structure
Education
* Secondary education in gastronomy or equivalent
* Training in Korean cuisine (at a renowned institute or through recognized work experience)
* Strongly preferred: specialized training in South Korea
