To receive the deliveries from the suppliers based on the PO (+ quantity check & quality control,temperature check + keep log for diligence)
Stamp & sign the delivery note for receiving
Dispatch the engineering deliveries & meeting deliveries (concierge) + log
* To enter the delivery notes/invoices in Birchstreet for the accounting department
(+ verify prices)
* Responsable for the stocks in the General Store at -2.
(= prepare GS-requisitions for the outlets, re-ordering of products via PO in Birchstreet; e.g. operating supplies,paper,printing,…)
* To dispatch the deliveries to the outlets, food stores (dry food), cooling chambers,freezer, (fresh food) …
* Responsible for the Beverage-store & refill & orders for the dry food store. (ordering beverages and dry food for the restaurants, kitchen & prepare beverage requisitions)
Prepare the F&B requisitions for the outlets (Gullivers, Banquet & Club Lounge)
* Check expiry dates of fresh food(meat) & notify to the kitchen chef (= daily inventory count of fresh food and check expiry dates)
Post beverage requisitions into Birchstreet
3. F&B Controller:
* Calculate the daily food-cost % (= flashcost) for the kitchen chef & Entegra foodcost report
* do the Monthly F&b closing in Birchstreet + Make Inventory counts
* Fill in the Protocol sales on a daily basis
* Keep a log of the empty alcohol bottles (returning from the outlets)
* Micros system set-up for the F&B outlets.
(Create & adapt touchscreens buttons, packages, weekly suggestions buttons, to adapt sales prices)
* Menu Engineering reports for the food items,beverages, Color your plate-menus, Bestsellers… (= analyse of the menu's popularity & profit margins,split into 4 categories)
Order Office supplies for all the outlets (Staples-Nisbets-Scholz-Clavie-Verpa,…)
Attend to the weekly Groups/f&b meeting (BEO's overview)
Check with accounts payable if F&B & container receivings are in balance, based on daily receiving logs
Post credits into Birchstreet, post the charge outs (city ledger charges) into Birchstreet
