Purpose of the Role
The Restaurant Manager is responsible for the people, results, and daily operations of their restaurant.
The main goal is simple: to give every guest an exceptional experience through great food and genuine hospitality — every guest, every day. Everything else (planning, cost control, ordering, and reporting) exists to support that goal. Managers are expected to take ownership, stay organised, and think ahead. They make decisions confidently and lead their teams with structure and purpose.
The aim isn't to work more, but to work smarter and stay in control — creating structure, anticipating what's next, and leading with consistency instead of reacting.
Core Responsibilities
Hospitality & Guest Experience
* Guarantee warm, genuine, and consistent hospitality.
* Keep the restaurant clean, calm, and on brand.
* Handle guest feedback constructively and promptly.
* Lead by example in attitude, detail, and professionalism.
Leadership & Team Management
* Build and coach a confident, independent team according to Umamido's values and standards.
* Empower Team Leaders to lead daily operations without constant supervision.
* Provide structured feedback and recognition; address underperformance immediately.
* Maintain a respectful, honest, and growth-oriented work environment.
Operational Excellence
* Plan and delegate proactively to ensure smooth daily operations.
* Maintain strict compliance with hygiene, safety, and brand procedures (HACCP / SOPs / recipes).
* Anticipate issues early and implement sustainable, long-term solutions.
* Act immediately on audit results (internal or external) and follow through on corrective actions.
Business & Financial Performance
* Own your P&L; protect profitability through planning, cost control, and smart use of resources.
* Manage revenue, labor, food cost, waste, reviews, audits, and absenteeism against target.
* Review weekly performance and act on deviations without delay.
* Understand that strong financial results come from consistently great hospitality and product quality.
Communication & Reporting
* Report directly to the District Manager.
* Escalate issues you can't solve locally or that impact guests, the team, or the brand — including HR, safety, legal, or approval matters.
* Keep all reports and systems accurate and updated.
