TATEL Restaurant Marbella is seeking an experienced and passionate Sous Chef to join our prestigious pre-opening team for our upcoming luxury dining destination on Marbella's Golden Mile. As part of the internationally acclaimed TATEL family (backed by Rafael Nadal, Pau Gasol, and Cristiano Ronaldo), you will play a crucial role in establishing our signature haute Spanish cuisine concept that blends traditional flavors with contemporary international flair

Key Responsibilities


Culinary Operations

* Support the Executive Chef in overseeing all kitchen operations for both restaurant and beach club service
* Ensure consistent execution of TATEL's signature Spanish dishes including our famous rice specialties, croquets, and premium seafood preparations
* Maintain the highest standards of food quality, presentation, and taste in line with TATEL's international reputation
* Assist in menu development and seasonal adaptations featuring traditional Spanish recipes with contemporary twists
* Supervise food preparation across all kitchen stations including cold preparations, hot kitchen, and specialized Spanish cooking techniques


Pre-Opening Responsibilities

* Participate actively in the restaurant's pre-opening phase, including kitchen setup, equipment installation, and workflow optimization
* Collaborate with the Executive Chef to establish standard operating procedures (SOPs) for all kitchen operations
* Assist in developing training materials and protocols specific to Spanish cuisine techniques and TATEL's culinary standards
* Support the recruitment and initial training of kitchen brigade members
* Work with suppliers to ensure sourcing of premium Spanish ingredients and local seasonal products


Team Leadership & Management

* Lead and mentor kitchen staff, fostering a positive and collaborative work environment
* Delegate tasks effectively across kitchen stations and ensure smooth workflow during service
* Conduct regular training sessions for culinary team members on Spanish cooking methods, presentation standards, and food safety protocols
* Manage staff schedules and coordinate coverage for all service periods
* Step into Executive Chef role when required, maintaining full operational control


Quality Control & Safety

* Implement and maintain HACCP standards and ensure compliance with all health and safety regulations
* Monitor inventory levels, control food costs, and minimize waste while maintaining quality standards
* Ensure proper care, maintenance, and sanitation of all kitchen equipment and work areas
* Conduct regular quality checks on all dishes before service to maintain TATEL's exacting standards


Required Qualifications


Experience & Background

* Minimum 4-5 years of professional culinary experience with at least 2-3 years in a Sous Chef or similar leadership role
* Proven experience in high-end, fine dining establishments, preferably in luxury hotels or upscale restaurants
* Pre-opening restaurant experience strongly preferred, with understanding of setup, training, and launch procedures
* Spanish cuisine expertise required - deep knowledge of traditional Spanish cooking techniques, ingredients, and regional specialties
* Experience with Mediterranean cuisine and international culinary concepts an asset


Technical Skills

* Advanced culinary skills including knife work, classical cooking techniques, and modern food preparation methods
* Expertise in Spanish specialties such as paella preparation, tapas creation, seafood cookery, and traditional Spanish desserts
* Menu development experience with ability to contribute creative input while maintaining authentic Spanish flavors
* Kitchen equipment proficiency including Josper grills, professional ovens, and specialized Spanish cooking equipment
* Food cost control and inventory management skills with understanding of premium ingredient sourcing


Education & Certifications

* Culinary degree or professional culinary training from recognized institution preferred
* Food safety certifications (HACCP, ServSafe, or equivalent) required
* Valid work authorization for Spain mandatory
